BACON, MUSHROOM, SMOKED GOUDA QUICHE
This rich, delicious quiche  (calories are quite modest though, amazingly!) will feed a crowd.  With bacon, onions and mushrooms and infused with smoked Gouda cheese, it’s bound to impress.  However, instead of the more expensive smoked Gouda cheese, one could use any other hard yellow cheese. My hubby was rather horrified to find out that I had used his expensive smoked Gouda cheese, but his heart or stomach melted when he tasted how good this quiche was.  I had no idea smoked Gouda is so pricey, as he bought it! LOL  He likes to eat it like chocolate, you know?  It is his latest discovery. If you like even more cheese, feel free to use more.  However, next time I think I will use Cheddar cheese.


6 slices bacon
1 medium onion, chopped
2 lbs mushrooms, sliced (0.9 kg)
1/tsp seasoning salt (2 mL)
1/tsp black pepper (0.5 mL)
8 eggs
1 cup whipping cream (250 mL)
1/tsp salt (2 mL)
1/tsp black pepper (1 mL)
13/cups grated smoked Gouda cheese, divided, OR (425 mL)
  any other hard yellow cheese of your choice

Preheat oven to 350°F (180°C). 

In large, nonstick frying pan, over medium heat, cook bacon until crispy.  In medium bowl, set bacon aside to cool. Reserve bacon fat. When cool, cut bacon into little pieces with kitchen shears.

In 2 tbsp (30 mL) bacon fat, in same frying pan, cook onion until turning golden brown.  Add onions to the chopped bacon.  In same pan, in 2 tbsp (30 mL) bacon fat, toss mushrooms.  Fry 2 minutes. Sprinkle with seasoning salt and black pepper.  Place lid on pan and cook until moisture evaporates.  Add mushrooms to the bacon and onions. 


In large bowl, beat eggs with fork real well.  Stir in cream, salt and black pepper.  Mix well.  Stir in 11/4 cups (300 mL) smoked Gouda cheese along with the mushroom mixture.  Pour into a 9 x 13-inch (23 x 33 cm) casserole dish.  Bake 30 to 35 minutes, or until puffed and set.  Sprinkle with remaining 1/2 cup (125 mL) grated smoked Gouda cheese (optional - see photo of casserole above without the extra cheese).  Place in oven and bake a further 5 minutes to melt the cheese.
